When it comes to protect hands again sharp edges or knife blades, you need to consider the level of cutting resistance.
Within the European norm (EN 388: 2016), there are 6 levels of protection from A to F. A is the lowest level of protection, whereas F is the highest. However, an level F cut resistant gloves is perhaps not what you are looking for. Check with your local representative what kind of glove should be perfect for your usage.
